Hearty Pork Stew
1 cup buttermilk 5 teaspoons Pork Power Herb Blend, divided 1/4 teaspoon salt, if desired 1 pound boneless pork, cubed 6 teaspoons olive oil, divided 1 medium onion, peeled and chopped 1 medium sweet potato, peeled and cubed 2 medium red potatoes, peeled, if desired, and cubed 3 carrots, peeled and sliced 2 cups vegetable stock 1 bay leaf 1 Tablespoon cornstarch Mix the buttermilk, 3 teaspoons of the Pork Power and salt. Add the pork cubes and marinate in refrigerator for 3-4 hours. Heat 4 teaspoons of the oil in a 3-quart saucepan. Remove the pork cubes from the marinade and dry off as best you can. Add to the hot oil; brown well on all sides. Remove with a slotted spoon and set aside. Add remaining 2 teaspoons of oil to the hot saucepan and then add the onion, sweet and red potatoes and the carrots with remaining 2 teaspoons of Pork Power. Cook about 10 minutes, stirring frequently and scraping the bottom of the pan to prevent sticking. Return the meat to the saucepan. Add the vegetable stock and bay leaf; bring to a boil. Lower heat to a gentle simmer and cook until the vegetables are cooked through, about 20-30 minutes. Combine the cornstarch with 1/4 cup of cold water; pour into the stew, stirring constantly. Cook 3-4 minutes longer until thickened. Makes about six servings.
