Recipes with Yankee Cajun Spices

 
Cajun Turkey Burgers

 

1 pound ground turkey

1 Tablespoon Yankee Cajun Spices, divided

1/4 cup mayonnaise

4 sandwich buns

1 cup shredded lettuce

4 thick slices tomato

1 avocado, sliced into 16 sections 

Preheat a large skillet over medium-high heat. Preheat broiler.

Divide the turkey into four patties. Sprinkle one side of each patty with 1/4 teaspoon of the Cajun Spices; rub lightly into the meat.  Place the patties, seasoned side down into the hot skillet. Season other side of turkey patties with another 1/4 teaspoon spice each.  Cook the burgers for about 4 minutes or until they are well-browned; flip and cook through.

Meanwhile, mix the remaining teaspoon of Yankee Cajun Spices into the mayonnaise. Set aside. Split the buns and toast under the broiler.

Spread the bottom half of each bun with 1 Tablespoon of the seasoned mayonnaise. Top this with 1/4 cup of the shredded lettuce and a tomato slice. Add a cooked turkey patty to each sandwich. Arrange 4 of the avocado sections over the patties and finish with top bun.

Makes 4 servings.

Cajun Corn Chowder

 

4 teaspoons butter

1 Tablespoon olive oil

1/2 cup each minced onion, minced celery and minced bell pepper

1 bunch green onions, sliced (reserve sliced green tops for garnish)

1 large clove garlic, minced

1 medium jalapeno, seeded and minced

2 teaspoons Yankee Cajun Spices, divided

2 medium potatoes, peeled and diced

1 can (15 ounces) cream-style corn

1 cup frozen corn (or fresh kernels, if available)

1/2 teaspoon salt or to taste

1/2 cup milk

 

Heat butter with oil in a 3-quart saucepan over medium heat. Add onion, celery, bell pepper and 1 teaspoon of the Cajun Spices. Sauté about 3 minutes. Add green onions, garlic and jalapeno; cook and stir 2 minutes more.  Stir in the potatoes.  Cover and, stirring regularly, cook about 10 minutes.  As you stir, scrape the bottom of the saucepan to prevent sticking and burning.  Stir in creamed corn and corn kernels with 1 more teaspoon of the Cajun Spices and 1/4 cup of water.  Simmer 5 minutes.

 

At this point, reduce heat to low. Taste for seasoning and add salt and more spice if desired. Stir in milk, gently cooking until heated through but do not allow to come to a boil.

 

Sprinkle each serving with reserved sliced green onion tops. Makes 4-6 servings.

 

COOK'S NOTE:  A bit of shrimp or crab makes a tasty addition.  Add cooked seafood with the milk.
