2 teaspoons butter 2 teaspoons olive oil 1 pound summer squash, sliced thin 2 heaping teaspoons Veggie Variety Spice Blend Salt to taste 2 Tablespoons freshly grated Parmesan cheese
Melt the butter with the oil in a wide skillet over medium-high heat. Add the sliced squash and sauté for about 5 minutes, stirring or tossing frequently. Add the Veggie Variety, toss to coat and continue cooking 7-10 minutes more until the squash is softened and beginning to brown. Salt, if desired, near the end of cooking. Transfer to a serving dish and sprinkle with the cheese. Makes 2 or 3 side dish servings.

¨ Use any combination of your favorite vegetables the recipe above. ¨ Stir 1 Tablespoon (or more) of Veggie Variety into an 8-ounce container of sour cream for a great chip dip or baked potato topping. ¨ Mix with melted butter and/or olive oil for a quick veggie sauce. ¨ Add to the water as you boil fresh or frozen vegetables. ¨ Sprinkle a bit of Veggie Variety into any of your favorite recipes. ¨ Combine with olive oil and white wine vinegar for a quick vinaigrette. ¨ Season cream cheese and spread on flour tortillas with some roasted and minced red peppers for a quick wrapped snack.
