Recipes with Tempting Potato Spices

 

Potato-Leek Soup

 

1 leek, halved lengthwise and sliced

1 Tablespoon canola oil

5 medium potatoes, peeled and cubed

2 1/2 teaspoons Tempting Potato Spices, divided

1/2 teaspoon salt

3 cups chicken stock

1 bay leaf

1/2 cup milk

Chopped fresh parsley, for garnish, optional

 

Sauté the leek in the oil over medium-high heat until softened, about 5 minutes. Add potatoes, 2 teaspoons of the spice blend and the salt; cook, stirring regularly for another 10 minutes. Stir in the chicken stock, add bay leaf and bring to a boil. Reduce heat and simmer gently until the potatoes are very soft, about 15 minutes. Break up the larger chunks of potato with a fork; stir in milk and remaining 1/2 teaspoon spice blend. Heat through but do not boil. Remove bay leaf and serve immediately, garnishing each bowl with a sprinkling of parsley, if desired. Makes about a quart of soup.

 

Seasoned Cocktail Crackers

 

1/2 cup vegetable oil

3 Tablespoons Tempting Potato Spices

1 bag (10 ounces) oyster crackers

 

Preheat oven to 300 degrees (F). Combine the oil with the spices in a large bowl. Add the crackers; toss well to coat evenly.  Spread the seasoned crackers in a single layer on a large baking sheet. Bake for 15 minutes.  Allow to cool. Serve right away or store in a tightly sealed container.

Makes about 3 cups crackers.

 

Other ideas for Tempting Potato Spices

 

¨      Season pan-fried potatoes, yams, sweet potatoes and plantains.

¨      Add a bit of butter and the spice blend to drained, smashed boiled potatoes.

¨      Use it in place of the spices for Roasted Potato Paprikish at All About Paprika.

¨      Mix into sour cream for baked potatoes or as a veggie/chip dip.

¨      Sprinkle over all your favorite vegetables.

¨      Season potato salad.
