Smoked Salmon Spread
8 ounces cream cheese, softened 4 ounces smoked salmon, crumbled 1 1/2 teaspoons Something's Fishy Spice Blend 1 teaspoon prepared horseradish, if desired for a bit of heat Salt, if desired
Combine all ingredients using the steel blade of a food processor. Taste for salt and add if desired. Serve at room temperature as a spread for crackers or with cut vegetables as a dip. Also makes a nice filling for omelets. Makes about 1 1/4 cup.
Fish in a Flash Cook your fish any way you prefer just be sure to top it with this tangy sauce/garnish.
1 Tablespoon extra-virgin olive oil 2 teaspoons lemon juice 1 teaspoon Something's Fishy Spice Blend 2 fish fillets of your choice
Combine the oil, lemon juice and spice blend in a small bowl. Allow to sit for at least 5 minutes. Heat a non-stick skillet over medium-high heat. Coat with a bit of non-stick spray; add the fish fillets, presentation side down. Leave this side down until the fillets are nearly cooked through and browned nicely. Turn and finish cooking. Transfer the fillets to a serving platter or individual plates, drizzle the seasoned oil and lemon juice mixture over them and serve right away. Makes 2 servings.
Other ideas for Something's Fishy Spice Blend ¨ Combine with olive oil and pour over fish before baking, broiling or grilling. ¨ Season canned tuna or salmon for salads and sandwiches. ¨ Make a marinade of oil, spices and orange, lemon and lime juices for shellfish (don't soak too long, it will become mushy). ¨ Add spices to mayonnaise and pickle relish for a quick tarter sauce. ¨ Try it with oil and vinegar as a salad dressing. ¨ Try baking your seasoned fish in parchment paper as described in the recipe at "All About Curry Powder" on www.apinchof.com.
