Fifteen Spice Curry

 
 
 

Chicken Curry with Almonds

 

1/4 cup sliced almonds

2 Tablespoons olive oil

1 medium onion, chopped

1 large carrot, chopped

1 clove garlic, minced

1 Tablespoon Fifteen Spice Curry

1 boneless, skinless chicken breast (about 6 ounces), cubed

4 ounces (a good handful) snow peas, sliced

1 1/4 cup coconut milk

1/2 teaspoon salt, more or less to taste

2 cups freshly cooked Basmati rice, for serving  

Toast the almonds in a dry 9-inch skillet over medium-high heat by shaking until nicely browned. Transfer to a small plate; set aside.

Return the skillet to the heat; add the olive oil. When it becomes hot and fragrant, add the onion and carrot. Cook and stir 2 minutes. Add the garlic and curry powder, cook, stirring constantly, another minute. Add the cubed chicken; cook 5 minutes, stirring regularly. Add the snow peas, cook one minute more. Pour in the coconut milk and salt. Bring to a boil then reduce heat to medium-low. Allow to simmer about 10 minutes.

Just before serving, arrange the hot rice in a ring on a serving platter. Ladle the curried chicken into the center.  Sprinkle with the toasted almonds and serve immediately.  Makes two or three servings.

Other ideas for Fifteen Spice Curry

¨      Season soups, stews, meats and fish.

¨      Mix with heavy cream, bring to a boil and reduce by half for an easy sauce.

¨      Use to season nuts as in the recipe at Blue Ribbon Chili Powder.
